A capacidade antioxidante e a qualidade pós-colheita do abacate 'Fuerte' foram avaliadas. Os frutos foram mantidos sob temperatura ambiente (24 ± 1 ºC) e sob refrigeração em 10 ± 1 ºC e 90±5% UR e avaliados durante 15 dias. Determinaram-se a perda de massa e a taxa respiratória. As características físico-químicas avaliadas foram acidez total titulável (AT), sólidos solúveis (SS), ratio, pH, firmeza, atividade da enzima polifenoloxidase (PPO), cor (L, a* e b*), fenólicos totais e atividade antioxidante (AA) por DPPH·. Nas duas condições de armazenamento, o pico respiratório ocorreu no 9º dia.Os frutos mantidos sob temperatura refrigerada apresentaram menor perda de massa e maior firmeza em relação àqueles em temperatura ambiente. O comportamento respiratório refletiu na redução dos valores de AT e no conteúdo de SS que diminuíram a partir do pico de respiração. Os valores de pH aumentaram como consequência da diminuição da AT. Os valores de luminosidade mantiveram-se elevados, observando-se diminuição do componente de cor verde na polpa com o armazenamento. A atividade da PPO diminuiu com o armazenamento. Os valores de AA variaram de 17,6 a 68,7%. O conteúdo de fenólicos totais diminuiu após o pico respiratório, e valores crescentes de AA foram observados mesmo após o 9º dia.

This study aimed to determine the antioxidant activity, total phenolic compounds and color in avocado 'Hass' hydrothermally treated. The fruits were hydrothermally treated at 45 degrees C for 5, 10, 15 and 20 min. After treatment, fruit were stored at room temperature (21 +/- 1 degrees C and 70 +/- 5% relative humidity) and cold (10 degrees C +/- 1 and 90 +/- 5% relative humidity). The fruits were analyzed for their antioxidant capacity by DPPH method and phenolic compounds at 0, 3, 9 and 12 days. The fruits color was measured at 0, 3, 6, 9, 12 and 15 days. The control fruits had higher antioxidant capacity and content of phenolic compounds during the storage period, compared to the fruits hydrothermally treated. The hydrothermally treatment altered the behavior as for the maintenance of the antioxidant activity in relation to the fruits control. In spite of superior values of antioxidant activity for the fruits maintained at 21 +/- 1 degrees C and 70 +/- 5% relative humidity, those refrigerated presented better aspect for commercialization. The refrigerated fruits presented better aspect for commercialization in relation to the maintained under room temperature. The brightness, color a * and b * values decreased with the storage days. Values color superiors were observed for the fruits control and those maintained under refrigeration. As it increased the irradiation dose reduced the fruits antioxidant activity and coloration.

Introduction: Physical exercise are related to high oxygen consumption, leading to increase on reactive oxygen species (ROS) generation and subsequent oxidative stress. Concomitantly, physical training can improve the antioxidant defense systems, reducing the deleterious activity of ROS. The yerba mate (Ilex paraguariensis) has several bioactive compounds in its composition, providing important antioxidant activity in improving defense systems and reducing the damage caused by ROS. Few studies related to yerba mate with antioxidant effects during exercise. Objective: Evaluate whether the consumption-based drink yerba mate (Ilex paraguariensis) is able to increase the total antioxidant performance (TAP) after an exhaustive test on a treadmill. Methods: The sample counted with 15 female soccers players from Botucatu-SP female soccer team with a mean age of 22.1 ± 4.2 years. For laboratory tests , it was evaluated: triglycerides (TG), total cholesterol (TC) and fractions, glucose and gamma-GT were dosed by dry chemistry (Vitros® System, Johnson & Johnson). LDL-cholesterol was obtained by Friedwald formula. Total antioxidant performance (TAP) was obtained by the method of fluorescence assay for the measurement of plasma. Weight, height and body mass index (IMC) were measured, percentage of body fat was obtained by bioeletrical impedance analysis (Biodinâmics, modelo 450, USA). Arterial blood pressure was checked by auscultatory method and cardiorespiratory fitness was determined by ergoespirometric test (Ramp Protocol). Maltodextrin was supplemented (30 g in 400 ml) 30 minutes after M0 with placebo (400 ml) or mate (5 g in 400 ml of water). The main objectives of this work were to evaluate the antioxidant activity and to determine of an ethanolic ginger extract total phenolic compounds concentration, as well as verifying its behavior by means of the oxidative stability, when added to refined soybean oil in concentrations of 0, 500, 1000, 1500, 2000 and 2500 mg/kg. The maximum antioxidant activity and EC50, concentration of the extract to achieve 50% of the antioxidant activity, value determined by free radical DPPH method were 79.1% and 42.6 g/mL, respectively. The total phenolic compounds concentration, determined to Folin-Ciocalteu method, was 251 mg/g. The induction period of the samples increased according to the augment of the extract concentration in the oil when evaluated using oxidative stability through the Rancimat equipament. It was possible to conclude that the ginger extracts possess effective action against the lipid oxidation and can be applied in foods as natural antioxidant.

O suco de laranja é um alimento rico em substâncias antioxidantes, como os flavonoides cítricos, vitamina C e carotenoides, que podem reduzir o estresse oxidativo que está relacionado à gênese das doenças cardiovasculares, diabetes e câncer. No entanto, o processamento da laranja para obtenção do suco interfere no tipo e quantidade dos compostos antioxidantes, podendo comprometer as ações esperadas. O objetivo deste trabalho foi avaliar a atividade antioxidante do suco de laranja, comparando os resultados após a ingestão aguda do suco de laranja fresco e do suco de laranja pasteurizado comercialmente em indivíduos adultos saudáveis. Cada voluntário foi submetido a dois tratamentos: ingestão aguda de suco de laranja fresco e, após intervalo de 30 dias, ingestão aguda de suco de laranja pasteurizado. Nos dois tratamentos foram colhidas amostras de sangue dos indivíduos antes e após a ingestão do suco de laranja. O efeito antioxidante total foi mensurado pelo ensaio do radical ABTS+ (2,2'azinobis (3-etilbenzenotiazolina 6-sulfônico) e pelo ensaio de TBARS (substâncias reativas ao ácido tiobarbitúrico) nas amostras de sangue. Observou-se um aumento de 2,2% na capacidade antioxidante do sangue a partir de 4 horas após a ingestão do suco de laranja fresco e que se manteve estável até 24 horas do consumo (p<0.05). Já com a ingestão do suco de laranja pasteurizado, a capacidade antioxidante se manteve estável e equivalente ao suco de laranja fresco nas primeiras 4 horas, mas aumentou 1,4% após 8 horas, permanecendo neste nível até as 24 horas seguintes (p<0.05). Após a ingestão do suco fresco, os níveis de peroxidação lipídica, diminuíram 27% nas primeiras 4 horas. Porém, a partir das 8 h retornaram ao valor inicial. Os resultados após o consumo do suco pasteurizado mostraram uma redução da peroxidação lipídica em 18% a partir das 4 horas e 8 h (p<0.05), e esta redução se acentuou (27%) às 24 h ...

Phenolic compounds and antioxidant capacity are defense mechanisms of plants against the oxidative stress damage. Phenolic compounds are synthesized through the phenylpropanoid pathway, where the enzyme phenylalanine-ammonia-lyase plays a key role and it is influenced by light and photoreceptors such as phytochromes. The present research aims to evaluate the phenolic compounds content and antioxidant capacity of the wild Micro-Tom (MT) cultivar tomato fruits and its photomorphogenic mutant tomato plants high pigment 1 (hp1), super responsive to events mediated by light, and aurea (au), quantitative phytochrome deficient. Twenty mature fruits of each genotype (MT, hp1, au) were used in triplicate for analyses. To quantify the total phenolic compounds the Folin-Ciocalteu method was used and the antioxidant capacity was analyzed by Ferric Reducing Antioxidant Power (FRAP) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) methods. The hp1 mutant presented the highest total phenolic compounds content and higher antioxidant capacity than wild cultivar (MT) and au mutant, which did not differ significantly from MT cultivar.
